Overdubbing yourself again is not an "exact" copy, but it's pretty close, so more likely to be 'phase-y'. If you think about what a phaser is, it's an exact copy of something but slightly time-shifted. Overdubbing one voice multiple times is a "sound" but it is not the sound you are looking for. Your problem is that your "choir" has only one voice. I have done some processing on them individually - dynamics to reduce volume differences between overdubs, EQ to reduce certain resonances, de-essing.I agree with pquinn and bill5.
